Our Philosophy

Small runs, huge character.

Kestrel began with a single drum roaster and a stubborn idea: that a cup of coffee should taste like the place it grew. Ten years on, we still buy directly from the same growers, still roast in batches small enough to watch, and still pour everything within four days of the drum.

From cherry to cup

01

At origin

We travel to the same forty-two farms every harvest — smallholders in Yirgacheffe, Huila and the Haitian highlands. Contracts are signed face to face, priced well above commodity rate, and renewed year after year so growers can plan beyond a single season.

02

In the drum

Every lot is roasted in twelve-kilo batches in the drum behind our marble bar. Small runs mean we can stop a roast the second the aromatics peak — never a minute into a profile written for someone else's beans.

03

At the bar

Nothing is served more than four days off roast. Each morning the team cups the day's batches before the doors open, dialing grind and water until the cup matches what we tasted at origin.
