Pastry laminated in-house, sandwiches pressed to order, and cakes cut from the tray each afternoon.

Laminated over three days and baked to a deep amber each morning.

Our Philosophy
We buy directly from growers in Ethiopia and Colombia, roasting in small drums right behind the marble bar. By keeping batches tiny, we preserve the bright acidity and floral notes that industrial roasters lose.
Everything is cupped and pulled within four days of roasting. When a harvest runs out, we move to the next. That means the menu changes with the weather, but the quality never does.
